Other regions were allowed to ues the term 'méthode champenoise' which means made by traditional method, but that is already some time ago, Spain has Cava, Germany Sekt and Italy provides Prosecco and Spumante. South Africa Cap classic, United States and Australia sparkling wine. Kir Royal is named after the brave French Kanunnik Félix Kir (1876-1968), he helped 5000 French prisoners of war to escape out of concentration camps. He was caught and condemned to death, but the judges were so impressed that they reprieve him mercy. Kir remained supporting the resistance, he was shot later but he survived. After the liberation he became the mayor of Dijon, from 1945 until 1967. Those days blanc-cassis drinks were served in cafés. Kanunnik Kir made his Kir Royal, instead of wine and crème de cassis he used Champagne. The best champagnes are from Roederer Cristal, Veuve Clicquot La Grande Dame, Bollinger Grande Année, Moet & Chandon Dom Pérignon.
