Crunchy Okra Family Food

Okra is a good source of both soluble and insoluble fiber, as well as vitamin B6 and folic acid. Admittedly, frying it is not for the health-conscious, but at least the good stuff is still there. So, okra is grown mainly in very warm climates and was probably brought to America from Africa three hundred years ago. It looks like a small, ridged pepper, but has a soft, almost fuzzy exterior rather than smooth like a pepper. The flavor is very mild. The thing about okra that usually turns people off is that when you slice it, the insides release this slippery, slimey substance. This actually makes it good to add to soups and gumbos, because it helps thicken the broth. Okra is also used in salads and relishes with corn, eggplant, pickles, etc. You can even pickle okra whole, just like small peppers and cucumbers. The way I like okra - and many other people - is breaded and fried. It is crispy and crunchy and makes a great side dish for your grilled burgers. Besides the okra, you don’t need much other than some cornmeal and shortening to make fried okra. You can also buy already breaded okra and just do the frying yourself. Very tasty Salt and Pepper Gobi

Ingredients: * 3 medium potatoes, peeled and cut into 1" dice or slices salt * 1/2 oz flaked almonds * 2 tbsp poppy seeds * 2 tsp ground coriander * 1 1/2 tsp whole cumin seeds * 4 cloves of garlic, peeled and chopped * 1/2 tsp ground ginger * 8 tbsp vegetable oil * 1 medium onion, peeled and finely chopped * 1/4 tsp ground turmeric * 1/8 tsp cayenne pepper * 8 fl oz plain yoghurt * 1 tsp garam masala Method: Dry fry almonds, poppy seeds, coriander and 1 tsp of cumin seeds in a small pan, stirring frequently until the almonds start to turn golden. Set aside. Blend garlic and ginger with 3 fl oz of water in a food processor. Set aside.Heat the oil in a heavy wide saute pan, and fry the potatoes until they turn brown on all sides. Remove potatoes with a slotted spoon and set aside on a plate. Add remaining cumin seeds to remaining oil in pan and stir, adding chopped onion, and fry until the onions turn a light brown. Add turmeric, and the cayenne, and fry and stir for a few seconds. Add the dry mix from the first pan, and the wet mixture from the food processor, and 3/4 tsp salt. Stir and fry the mixture. Whenever Very tasty Salt and Pepper Gobi seems to dry up add a tbsp of yoghurt. Keeping stirring, frying, adding tbsps of yoghurt, until all the yoghurt is used (it's important to add the yoghurt slowly). Add the garam masala and 4 fl oz of water. Mix well, and cover the pot tightly. Cook for about 30 minutes or until the potatoes are cooked through, stirring occasionally but always replacing the lid. Recollections of childhood

In my blog, you may find that many articles are about my childhood memories. Probably, you will pose a lot of questions, such as why do you always cling to your past? Can’t you lead a happy life now? Is there anything special worth your recalling? Is it because your psychological age is younger than others’? I can’t give you a clear answer right away. After some consideration, I do capture some reasons explaining why I like far back memories. Firstly, I am always mistakenly regarded as a teenage girl by people around me, for I have a baby face and look younger than my peers. Accordingly, I still preserve traces of childlike innocence. Moreover, as a high school teacher, I spend most of my time with my teenage students. A good teacher must become one with students. This also accounts for my psychological conditions. Secondly, I am not a city girl by origin. My early years were spent in the countryside. The beautiful rural scenery and simple and honest connections between folks left a deep impression on me. In this fast-paced society, I couldn’t spare some time to find a quiet place to relax my tired soul. On starless nights, I often resort to my bygone memories to relieve pressure and discomforts. Thirdly, like everyone else, I have an amiable grandma in my childhood. She is an important person and brought me up with her rough hands. She taught me many things and cared and protected me from all hurts in my delicate infancy. I spent numerous happy days with my grandma, which later constitutes my source of reminiscence. Every time I think back, limitless scenes pour into my mind, forming a live TV series. Then I have the impulse to write them down. Fourthly, I am a sensitive girl by nature and susceptible to the external world. While I am alone, my mind wanders around, from the present coffee cup held in hand to the teddy bear in my old home, my pals in the kindergarten or an afternoon some years ago when rosy clouds covered the west of the sky, numerous red dragonflies were flying around…Memories are treasures of one’s life. In the dull days, they brighten our life and bring more happiness and consolation to us. Childhood is like a harbor where weary souls can have a rest temporarily.
